It became possible to do large-lot rice polishing with good effect by the popularization of "water-wheel" rice polishing using the power of water, replacing the "rice-stomping" method using the raw strength of man. The resulting advanced rice polishing and mass production were one of the reasons for the prosperity of Nada "sake".

Advanced rice polishing has become possible by vertical rice polishing equipment controlled by computers. Even "Yamadanishiki", said to be difficult to polish, is polished up to 35% and is used for the making of "Dai Ginjo 'Sake'".
